Very healthy to skip breakfast in general, IMHO. I've done it for years.

Oddly enough, my first (and only) 20 oz cup of coffee in the morning actually occasionally makes me sleepy....could this be possible, or am I imagining it? On days I skip coffee, I don't feel as tired.

I take it black with just a pinch of salt, or occasionally a few drops of electrolyte, like 40,000 Volts - I find it takes some of the bitterness off it.
For the year after law school that I lived by myself and had actual free time, I fell into a two meal a day routine on weekends. Huge breakfast at about 8:30/9am, with a french-press-full of coffee. Out the door for rehearsals, hiking, and fishing. Moderate dinner around 6pm. Healthiest I've ever felt.

However, in my family now, I am the outlier. My wife and daughter are NOT breakfast people. I can't go without it.

But since I'm now less active than I had been, I feel better on a day to day basis (and my doctor is happier with me...) with a smaller breakfast, big lunch, and moderate dinner. Also heartburn is a thing that started happening a while ago. So "moderate" is very key these days...
