What materials (books, solos, etc.) would be good for young euphonium students (6-8 grade) to work on who are schooling at home during the pandemic?

From Treble Clef to Bass Clef Baritone by Reginald Fink would get my top recommendation.
Don't let the title mislead you; if you're familiar with Melodious Etudes for Trombone, the Fink work makes a nice "pre-quel" for students not quite ready for the Rochut compilation.

There's also a nice book called "My First Arban" that I've used with students before. I've also really enjoyed the Tradition of Excellence, Book 3 - don't let the title fool you, lots of great stuff in there when it comes to more advanced time signatures. It also has melodies from some classic concert band literature.

Philip Sparke has a superb 3 volume series called Starter Studies, Skilful Studies and Super Studies that range from beginner to upper intermediate level. Very melodic in a wide variety of styles. Treble and bass clef. Volumes are reasonably priced at SheetMusicPlus.com and other locations.
